I’m obsessive about finding songs in shows and commercials .. I hear them all the time, have to find them on the internet .. blah blah .. I have no idea why I do this .. but I enjoy finding new music to listen to.

These are Rocky’s last few days in our house .. Thursday he’ll be getting used to his new home with my mom, dad, sister and Ella. I’m sure Big Boy and Little Girl will miss him, but he also bugs them alot :) So separating them, and putting him in a good home is a relief for us. Of course if he’s miserable and lonely down there we’ll take him back in a heartbeat, but I have a feeling he’ll be spoiled rotten.

Also I decorated for Halloween .. yay!! I dont have plans for any decorations around the house, since we really dont expect any trick-or-treaters (we live in the middle of nowhere), so at least I can decorate my website :)

Palm Bay Dog Park — This Saturday!

I’ll be there .. 9am with the triplets .. the weather forecast looks awesome. Come out and let your furry kids play :)

To get there .. take I-95 to Malabar/Palm Bay exit (I think its #73) Head west for a long while .. past Minton, past a couple more lights .. you’ll see little brown signs for the park on your right. If you reach Parkside West or a dirt road, you’ve gone a little too far, the park entrance is along the east side of Parkside. The dog park is in the back of the park, follow the green signs :)

Slow Cookin’ Thursday

A slow cooker book just happened to catch my eye yesterday at BJs, and when I opened it up, it ended up on the page with this Thai Chicken recipe .. which I’m a big fan of Pad Thai chicken at the moment .. so today I’m going to give it a shot ..

Here’s the original recipe from Fix-It and Forget-It: 5 Ingredient Favorites.

  • 6 skinless chicken thighs
  • 3/4 cup salsa (your choice of mild, medium or hot)
  • 1/4 cup chunky peanut butter
  • 1 Tbsp low sodium soy sauce
  • 2 Tbsp lime juice

Optional:

  • 1 tsp ginger, grated
  • 2 Tbsp cilantro, chopped
  • 1 Tbsp dry-roasted peanuts, chopped
  1. Put chicken in slow cooker
  2. In a bowl, mix remaining ingredients together, except cilantro and peanuts.
  3. Cover and cook on low for 8-9 hours until chicken is cooked but not dry.
  4. Skim off any fat. remove chicken to a platter and serve topped with sauce. Sprinkle with peanuts and cilantro if you wish.
  5. Serve over cooked rice.

Now … I actually used 4 skinless chicken breasts, that are frozen .. because that’s what I had in the freezer. I also used just under a half of a cup of peanut butter .. because I thought 1/4 cup wasn’t enough, and 2 Tbsp of soy sauce for the same reason. I added the ginger, and used medium salsa. I put everything in at 11am this morning on high, and I’m planning to switch to low in an hour or 3 .. just going to do a little bit of research first. Hopefully tonight I’ll have pictures and a review for you guys!

UPDATE: Okay … the chicken cooked almost perfectly, just fell apart. But the flavor of everything.. well .. it kinda tasted like Mexican food, like refried beans. I blame the salsa. Maybe I cooked it too long, but I didn’t taste the soy, ginger, or lime at all .. and very little peanut butter, even though it sure looked like it was all peanut butter. I’d like to find out what the real thai ingredient is that the salsa is supposed to replace .. I’m sure that would make a big difference. Everything smelled great when it started cooking .. just think it might’ve cooked too long.

UPDATE #2: Sean loved it. 

It’s not rocket science …

Tonight an Atlas V rocket launched from KSC .. I was watching Pushing Daisies and the local news showed the launch side by side with the show .. so I yelled to Sean lets go outside and watch. We run outside, searching the horizon for any sign. The sky is clear, plenty of stars .. but yet .. no rocket. I check the TV inside and the rocket was def. in the air so we should’ve seen it. So we give up .. head back inside .. when I realize that I was watching the DVR, not the live show!! The rocket had gone off about 15 min before I saw the news broadcast :) Duh!

I Passed!

A little over a year ago I started thinking about becoming an ultrasound/sonogram tech .. yeah it kinda came out of the blue, but I’ve always wanted a health/medical career .. I even tried a few while in college. Unfortunately I couldn’t handle 1st period classes my freshman year. Anyways .. last week I stopped by Keiser University because I knew they offered a program for ultrasound and I got all their details. Today I went back to take the entrance exam and got a 35 when I needed a 25 to get in .. they said not only did I pass but I ‘spanked’ the test.. but I was actually disappointed because it was out of 50 questions  (it was a timed test .. I think I got up to like # 42, but still) .. now I have til the end of the week to decide if I want to join the program. The only thing holding me back is cost .. its not cheap .. so I’ll keep you posted on what I decide.

Wednesday is fun day!

Yesterday I spent the early afternoon hanging out at the mall with Nikki, Halle, Keri, Belle and Corgan. I had alot of fun shopping for Ella, watching the kids play at the indoor playground and holding a sleeping Corgan, but the best part was spending time with Nikki and Keri. Oh, and that I decided to take my diet cheat day 1 day into my diet ;) Bad Bad Erica. Oh well. This morning my left bicep is actually sore from holding Corgan, maybe I can count that as a work out :)

Then last night Nikki came over for our new Wednesday Sewing night .. I actually made some good progress on a project I stopped working on a few weeks ago. Its really nice to have like a dedicated time to work on crafty things, and even nicer to have some one else there so you’re not just talking to yourself :) Plus, since we’re both learning .. its awesome to have another person to try to help figure out what the heck sewing books are talking about (they’re so confusing!) I’m looking forward to next Wednesday!
