A few weeks ago when I was home visiting the family we (Liz and I) had a huge craving for tomato, mozzarella & basil .. one of our favorite things to eat right now. We picked up some Campari tomatoes because they were on sale, and now I’m addicted. Which kinda sucks, because Campari are the best tasting tomatoes EVER, and they’re ridic. expensive normally.

I even went searching through the internet on where I could buy seeds for these amazing tomatoes, and turns out they’re a hybrid variety and apparently ‘patented’ or something .. so they’re really hard to find. I did find one woman who harvested the seeds from her bought tomatoes .. but because they’re hybrid, you never know what you’re going to get when you plant the seeds [Go check out Judy's Square Foot Garden, she posted pictures of 2 of her Campari plants today].

Anyways .. to the yummy goodness. This is seriously simple, I just wanted to show you guys how pretty it is :)

First chop up some tomatoes. I like them pretty small because I’m going to use small pieces of baguette to eat it off of.

Then ‘chiffonade’ a few leaves of basil.

What does that mean? Basically you’re going to make tiny ribbons of basil. Why? Because its pretty :) So roll up your basil leaves.

Then make tiny slices.

Then add a dash of olive oil and a pinch of salt.

Oh wait! I forgot the garlic .. Smash 1 clove of garlic with the side of your knife (so you can peel it easily)

Then put it through your garlic press. This garlic press looks pretty beat up, thats because I put it through the dishwasher. But its the best garlic press ever, I actually wanted it for years and finally got it for my 26th birthday :) I was soo excited!

Ok, now you can mix it all up, cover it with plastic wrap and let it sit in your fridge so the flavors ‘get friendly’ with each other. 

Now slice up some fresh mozzarella .. man do I love fresh mozzarella. This is only half a ball, I knew I was going to end up eating all of this by myself, and I know that I would eat an entire ball of mozzarella if I let myself :)

Cover that up and stick it in the fridge as well

Slice up your baguette

Then toast them at 350 for 5 min on one side, then flip for 3 more minutes.

Then assemble!

First I start with mozzarella on the toast .. and sprinkle a little salt on that. That alone is heaven.

Then top with the tomato basil goodness.

I managed to eat every bit of the above before I could finish writing out this post .. its addicting! :) There are no real measurements for this, so I’m not going to write out a recipe .. just follow the steps above!
