
I’m so happy to be home and be able to cook my own food. Not just living on the tour bus, but living in my parents house, has made me miss making my food decisions so much. And I know my family would love for me to step up and make them a meal once in awhile, but I grew up being the odd ball one that always ate her own thing, none of the veggies and other stuff that everybody wants. I still do that too .. they like to eat yellow squash and zucchini alot .. I dont :\ So I just eat my plain meal and I’m very thankful that they let me just mooch off of their dinner
So yesterday I made a trip to the grocery store and loaded up on some good stuff. Last night I make mojo marinated chicken breasts, roasted asparagus and black beans and rice. For breakfast this morning I had organic blueberries with fat free cottage cheese. Lunch was the chicken, beans and rice left over from last night, but I made it into a chicken bowl and made some pico de gallo and mixed in some guacamole. I also toasted up some chips and sprinkled a tiny bit of cheese on them (not enough to be considered nachos). Mmmm! Tonight’s dinner is steak, corn on the cob and crash hot potatoes. And tomorrow I’m cooking my first brisket (well besides corned beef). I’ll let you know how all that turns out
